The nights are closing in, it’s Bake Off season, we’re on the countdown to Christmas and summer is well and truly behind us. This means that the urge to bake (& eat) all kinds of desserts, puddings and cakes is well and truly heightened. Well, for me it is anyway!
I made these little granola-y almond, raisin, and cacao cookies the other day and they’ve turned out quite nicely so I wanted to share them. They’re fairly clean apart from the plain flour that I used but you can always replace this with almond or coconut flour for a cleaner bake but it doesn’t bother me too much. They come in at just over 100 calories each and won’t give you a sugar spike like any old supermarket biscuit will so they’re great if you’re trying to eat a little healthier but still love a sweet treat.
Ingredients (Makes 20 Cookies):
15g Chia Seeds
140g Rolled Oats
70g Instant Oats
80ml Honey, Date Nectar, Agave or Maple Syrup
65g Peanut Butter
40g Raisins (or other dried fruit!)
30g Cacao Nibs
55g Flaked Almonds
60g Flour (plain, almond, coconut, any will do fine!)
1 tsp Almond Essence
Method:
The method is pretty simple here, mix your dry ingredients in a big mixing bowl and then mix your honey and peanut butter together and then whack them all together! You can then create balls of your mixture and then flatten onto a baking sheet and bake for 16-20 minutes at 175º or until golden brown on the edges! So, so easy. If the mixture doesn’t seem to be forming into balls you can add a touch more syrup or honey until they’re sticking together a little better.

Calories – 121
Fat – 5g
Carbs – 15g
Protein – 3.5g
You can take out the flaked almonds if you want to reduce the fat and calories a little but these are a great way to get fats in if you usually eat a diet quite low in fat. I hope you enjoy this recipe, let me know if you make them!
