How to DIY Bottomless Brunch at home

We all love a good bottomless brunch don’t we? But, one thing me and my gals don’t love is the wavy bus or train ride home from brunch! What’s the answer to this teeny problem? Definitely bottomless brunch at home. Here’s my super easy but delicious plan for a bottomless brunch at home, just ask everyone to bring a bottle and it truly will be as bottomless as you like.

Plus, you can try whatever cocktails and drinks you like whilst you’re chilling at home. I had a little help from Prezzybox with some amazing The Old Curiosity Secret Garden Gin* in their Lavender And Echinacea flavour which is packed with floral flavours and is an amazing purple colour. We went for a classic G&T and also Mimosas with Prosecco and orange juice.

I sassed up the table with my favourite Next yellow placemats – you can see how I styled them for Christmas in this modern festive table post if you like! I also added the awesome Frida Kahlo Margarita Cocktail Set* which has amazing coasters, umbrellas, mixers and cute paper straws to the mix.

Now, onto the actual brunch. When you’ve got your besties over you don’t want to be slaving away in the kitchen so we opted for something super easy and also delicious. This calls for ready made pancakes or waffles or even just French toast. You can prep loads of it in advance such as the berries and yoghurt (aka just put them in bowls and on the table!) and then just have to chop up a quick banana and make a simple berry coulis before focusing on the waffles, pancakes or French toast itself.

We opted for Aldi toaster waffles with a Pinch of Nom French toast recipe which is in their book that we’ve been loving but this is a super similar recipe from Slimming Eats. This was so easy – all you do is make an egg, sweetener and cinnamon mix, dip the waffles in it and then fry them off in a hot pan with some 1 calorie cooking spray until they’re toasty and golden. Whip up a berry coulis by heating up some frozen mixed berries with a teaspoon of sweetener and a splash of water until they’re all melted. Leave to cool and it’ll thicken up a bit – this is my favourite accompaniment for porridge too. Serve with your syrup, yoghurt and berries and you are sorted. Bring on the Prosecco!
