Food is well and truly the way to my heart and it’s definitely the way to my other half’s too. We’re both massive foodies and love to explore new places to eat and new recipes to create. On Valentine’s Day last year we took a road trip to Bakewell, the home of the classic Bakewell tart and we just had to pick one up. Obviously, it tasted amazing! This year I decided to try and recreate a little bit of Bakewell for us but with a twist. I’m trying to eat a little bit cleaner and cut refined sugar out of my diet so I hunted around for a healthier version of the classic. Here it is!

To make these individual Raspberry Bakewells you will need;
100g Ground Almonds
150g Whole Almonds
140g Soft Dates
Almond Extract/Flavouring
Coconut Oil
Honey/Agave or Maple Syrup
Flaked Almonds
120g Frozen Raspberries

The original recipe is from one of my favourite blogs, Nadia’s Healthy Kitchen, where she creates some amazing healthy recipes. I tweaked the recipe slightly by making them into individual Bakewells but this is only because I didn’t have a round dish! I also didn’t add the sweetener to the chia jam as I don’t think it needs it. I did add a tiny bit of xantham gum to thicken the jam up a tiny bit too.
I picked up most of my ingredients from Rakuten.co.uk but they don’t just sell food, they stock loads of health & beauty products as well as fashion, tech and more.
This recipe is actually really easy, it just takes a little time to create all of the different sections, plus you need time for chilling. In between the time chilling you can just tidy up or whip up something else whilst you’ve got your food processor out.
Because I made individual Bakewells using a muffin tray I separated my marzipan section into small balls whilst the base was chilling to make it easy to do the next layer. Just a little tip from me!
